Objective: Ensure the meat grinder is thoroughly cleaned and sanitised according to Australian safety standards to prevent contamination and ensure food safety.

Applicable PPE (Personal Protective Equipment):

    • Disposable gloves
    • Apron or protective clothing
    • Closed-toe shoes.

Procedure:

Preparation:

    • Gather all necessary equipment and materials, including cleaning supplies and PPE.
    • Ensure the meat grinder is unplugged or disconnected from power to prevent accidental activation.
    • Wash hands thoroughly with soap and water before starting the cleaning process.

Disassembly:

    • Follow the manufacturer’s instructions to disassemble the meat grinder components, including the feed tray, blades, plates, and any other removable parts.
    • Place the disassembled parts on a clean and sanitised surface designated for food preparation.

Cleaning:

    • Wearing disposable gloves and other PPE, rinse the disassembled parts under warm running water to remove visible debris and meat residue.
    • Use a mild detergent or cleaning solution approved for use in food processing areas to thoroughly clean each part. Ensure all surfaces are scrubbed and rinsed clean.
    • Pay special attention to hard-to-reach areas and crevices where meat particles may accumulate.
    • Use a dedicated brush or scrubbing tool to remove stubborn residue or build-up.
    • Rinse all cleaned parts with clean water to remove any soap or cleaning solution residue.

Sanitisation:

    • Prepare a sanitising solution according to Australian safety standards. This may involve using a food-safe sanitiser or a solution of chlorine bleach diluted to the appropriate concentration.
    • Immerse all cleaned and rinsed parts in the sanitising solution for the recommended contact time specified by the manufacturer or regulatory guidelines.
    • Alternatively, use a sanitising spray or wipe to thoroughly sanitise each part, ensuring complete coverage.
    • Allow the parts to air dry completely before reassembly or storage.

Reassembly:

    • Once the sanitised parts are dry, reassemble the meat grinder components according to the manufacturer's instructions.
    • Ensure all parts are securely fitted and aligned properly to prevent malfunction or contamination during use.

Final Inspection:

    • Conduct a final visual inspection of the meat grinder to ensure all parts are clean, sanitised, and properly assembled.
    • Dispose of any used cleaning materials, such as gloves or wipes, in designated waste receptacles.
    • Wash hands thoroughly with soap and water after completing the cleaning procedure.

Documentation:

    • Maintain records of the cleaning and sanitisation procedures performed on the meat grinder, including dates, cleaning agents used, and any relevant observations or notes.

By following this procedure, you can effectively clean and sanitise a meat grinder in compliance with Australian safety standards, ensuring the production of safe and high-quality meat products.
